How's it going, Reader? I need to confess something. Years ago, when the Instant Pot first got popular, and everyone in my feed was suddenly pressure cooking whole chickens in nine minutes, I wanted one badly enough that I got up before dawn on Black Friday and stood in a line outside a store in the cold. For a pot. I remember thinking, very seriously, that this was a responsible financial decision. And I got it. π $40 off, which felt like winning something. I carried that box to my car like a trophy, went home, made exactly one pot roast with it, and then used it approximately four times over the next three years. Here is what I did not understand while I was standing in that line. The store was not losing money on me.
